All Our Bacon and Hams are cured just as they was a century ago, by rubbing with a dry cure which draws water from the meat and reduces its weight by 10%; and takes up to six weeks to fully cure. A pound of our bacon effectively contains 18 ozs for when cooked there is no loss of weight or flavour and no ‘puddle in the frying pan’.
Whereas the more modern process involves the injection of a liquid cure into the meat, increasing its weight between 10% and 45%; this method takes only minutes and a pound of such bacon may actually contain as little as 11 ozs of meat. When cooking, the liquid boils out taking with it a great deal of the flavour and leaving only the original meat content and a gluey residue in the pan. It is not difficult to see that what might appear to be cheap when purchased may well prove to be expensive when it reaches the table. Cig Moch means you don’t pay a high price for water!

Our Sausages contain a minimum of 90% top quality pork to which we add only farina, herbs and spices together with an absolute minimum of the preservative, ‘Safpreserve’ to ensure that they reach the customer in absolutely prime condition. We use no rusk or breadcrumb, therefore the sausages are Gluten Free and are listed by the Ceoliac Society as fit for consumption by Ceoliacs. Every pack bears a list of the ingredients; it is a very short list, as we do not use the myriads of chemicals to be found in the average supermarket ‘sausage’. In our sausages you can see the meat and taste the meat just as our grandparents did.
