There are many dishes which you can make with Cig Moch Bacon Ham & Gammons .there are some Old traditional recipes from Mrs Beeton and some New ones from modern cooks all are delicious and have their own variety Here are two our selected recipes of the month.
HAM CROUT'ES Ingrdients- 6ozs of finely chopped cooked ham 1/2 oz of butter, 1 tablespoon of cream.2 yolks of egg. 1finely chopped shallot .1/2 teaspoonfull finely chopped parsley, pepper, 8 round Croutes of fried bread. Method : Fry the shallots in the butter until slightly browned, then add the ham and stir until hot. Now put in the yolks of eggs and cream , season with the pepper, stir until the mixture thickens, then dish on thecroutes and serve sprinkled with the parsley Time about 15 minutes Sufficent for 6 -7 persons Cost About 8d Seasonable At any time 1909
BACON & MACORONI Ingredients- 4 ozs of macoroni, 4 ozs streaky bacon , 1/2 pint of stock 1oz butter, nutmeg, salt and pepper Method : Break the macoroni into small pieces put them into slightly salted boiling water, boil rapidly for 5 minutes and then drain well. Have the stock boiling in a stew pan, put in the macoroni and stew until tender ,but not too soft .Cut the bacon into small dice, fry slightly in the saute pan, then add the well drained maocoroni, butter, a god pinch of nutmeg. Salt and pepper to taste. Stir gently until the macoroni aquires a nice brown colour then turn out onto a hot dish and serve Time about 40 minutes Sufficent for 2- 3 persons Cost about 6d 1909
